MEET THE TEAM

Andrew Chantrell - General Manager

Prior to joining the Red Carnation Hotel Collection in June 2009, I was Owner/Manager of the Brue at Lydford-on-Fosse, Somerset. Before that I had a number of very successful years with von Essen Hotels, as General Manager of the Ston Easton Park Hotel in Somerset and Congham Hall in Norfolk. I am very proud to lead a team of dedicated employees who are all genuinely committed in providing each individual guest with a memorable experience based upon warm, friendly and attentive service.

Nick Bossé - Deputy General Manager

I have been in the hospitality business for ten years, seven of which I spent at Red Carnation’s The Oyster Box Hotel in Durban as Food & Beverage Manager, and the balance at various hotels and pubs in South Africa and abroad. I have a Diploma in International Hotel Management from Varsity College, and a Certificate from the Cape Wine Academy. During the renovation of The Oyster Box, I spent twenty months at The Twelve Apostles in Cape Town. Opening the new Oyster Box was a highlight of my career, and I found heading up the F&B department incredibly challenging and rewarding.
I moved to Guernsey in October 2010, and joined The OGH as Deputy Manager. My role along with the team is to ensure that you receive the very best standard of service, and to make sure that your stay is memorable.

Clément Baris - Executive Head Chef

I grew up in Bordeaux, where my father had a restaurant, and whilst food was in my blood it was more by luck than judgement that I entered the kitchen. Not quite knowing what I wanted to do my father set me to work in the family kitchen! I soon moved to a 2 Michelin Star restaurant in Magescq followed by a number of prestigious Relais & Chateaux properties in France. In 2006 I joined Summer Lodge Country House Hotel in Dorset which is also part of Red Carnation Hotels. In May 2008 I became Sous Chef at The Ritz before moving to Guernsey in June 2009 as Executive Sous Chef at The OGH. I was promoted to Executive Head Chef in March 2010 and, with my excellent team in the kitchen, I look forward to maintaining the wonderful reputation the hotel has for food and service.

Aureliana Diana - Front of House and Revenue Manager

I studied Tourism Economy at the University of Naples, and graduated in 2005. I then completed an MBA in Hospitality, before working in the marketing office of Concerto Fine Italian Hotels in Florence.
In February 2008 I joined Red Carnation’s two year Management Programme. During the programme I spent seven months in Guernsey at the OGH, and I was delighted to return as Front of House Manager on completion of the programme.
My team and I look forward to welcoming you to the Jewel in the Crown of the Channel Islands.

Tomasz Tobiasz - Conference and Banqueting Manager

After graduating from hotel school in Poland in 2006, I came to Guernsey and The OGH as a restaurant waiter. After a year, I became restaurant supervisor, and have worked my way up year by year. When Red Carnation Hotels bought the hotel in 2008 I became Maître’d in the Conference and Banqueting Department. Awarded Employee of the Year in 2010, I became Assistant Manager in April 2011, and then promoted to Head of Conference and Banqueting from August of the same year. It gives me great pride and joy, with my hardworking team, to provide the service and small touches we offer in all of our conferences and events.

Charlene Carter - Gym Manager

Having been part of the fitness industry for over ten years, and a fitness instructor for three, I have acquired a wide variety of qualifications, which include indoor cycling, boxercise, kettle bell, fitness for children and power plate level 2. This is a result of my natural drive to learn new skills and expand both my training knowledge and my ability to train people in the most effective way possible in order to meet and exceed their fitness goals.
At the end of October 2010, I joined The OGH as The Revolution Health Club and Spa’s Gym Manager, where I constantly aim to meet the highest standards of service possible and mirror the quality that The OGH hotel as a whole has achieved.
I look forward to the future of The Revolution Gym with high hopes and great anticipation.
